Red Onion Tarte Tatin



3 red onions

1oz butter

2tbsp clear honey

4 sprigs of thyme

2tbsp balsamic vinegar

For the pastry

250g ready roll puff pastry



Pre heat oven to 180C/gas mark 6

* Cut the onions into wedges, root to stem. Melt the butter in a 20cm frying pan with an oven safe handle.

* Fry the onions in the butter for 5 mins until they start to soften and brown.

* Add the honey and balsamic vinegar and cook for a further 5 mins. keep them moving so they don't stick to the bottom of the pan.

* Add the thyme and season, then leave to cool.

* Roll out the pastry and cut out a circle slightly bigger than the pan.

* Lay the pastry over the onions and tuck it down the sides of the pan. Make 2 slits in the pastry to allow steam to escape.

* Bake for 20-25mins until the pastry has risen.

* Remove from the oven and loosen the tart by spinning the pastry gently. 

* Place a plate on top of the pan, flip it over and serve.
